MEET THE PRODUCER | Tuke Yute lives with his two wives and twelve children on a 10-hectare farm high in the hills of Keramo Shanta. There, he processes coffee from his own farm as well as 30 outgrowers in the community. Some of the best coffees around are coming out of this little micro-region in Ethiopia this year, and Tuke has been a big part of that movement. His focus on quality and meticulous attention to processing has resulted - in the case of this lot in particular - in the best Ethiopian Natural we've tasted on the cupping table all year!

TRUST THE PROCESS | After being handpicked at peak ripeness, the lot is floated to remove lower-density beans between being fermented in cherry and spread out on raised beds to dry in the shade. Depending on temperature and humidity, this drying process takes about 20 days before optimal moisture content is achieved. 

TAKE A SIP | This coffee is quite clean for a natural, with lovely floral characteristics and a smooth sipping experience not unlike milk chocolate. Red fruit is noticeable but not overbearing - raspberries come to mind here. And the best part, perhaps, is an intense pineapple flavor that surprised and delighted us at the cupping table. It's a truly stunning example of the kinds of coffees being grown and processed in this small section of Sidama, and we couldn't be happier to feature it on our year-end menu.
