MEET THE PRODUCER | Julio Cesar Madrid is the director of the joint farms, Finca La Riveria and Finca Milan, which were first cultivated by Julio's ancestors over forty years ago. Together with his business partner and master processor, Andres Julio Quinceno, Julio has made it his life's work to produce incredible coffees and practice innovative and exacting processing methods.
TRUST THE PROCESS | After being picked at peak ripeness, the coffee cherries are sorted for quality and density at the processing center before being placed in a temperature-controlled bioreactor alongside fermented peaches and pineapples, as well as a specially curated starter culture. The fermentation process lasted 36 hours, during which time the temperature was manipulated and the musto, recirculated. The coffee was then dried in a dark, temperature-controlled room outfitted with a dehumidifier.
TAKE A SIP | The TLDR: This just might be one of our very favorite co-fermented coffees, ever. Complex florals and vibrant green apples are noticeable from the jump, while tropical fruits - like lychee - make for a fun and interesting addition to the party. A sweetness like peach syrup lingers on the palette long after you've taken the last sip.
