MEET THE PRODUCER | When we last had the privilege of visiting some of our partners in Quindio earlier this year, Juan Zuluaga of Cofinet offered us a cup of coffee grown by his dad, Jaime. Well, actually, he offered us several of his dad's coffees, and this one had us singing Blake Shelton's Sangria from the moment we first sipped it. We scooped it up straightaway, knowing it would be a perfect addition to our summer menu.
TRUST THE PROCESS | The coffee cherries are handpicked at peak ripeness and then fermented in an anaerobic environment for forty hours. After fermentation, they are removed to lounge in the sun until optimal moisture content is achieved.
TAKE A SIP | Fruit-forward and winey, this coffee showcases its processing in all the best ways. The previously mentioned sangria note is unmistakable, and it is complimented by fruit notes like raspberry and orange. The cup is intensified by a smooth richness reminiscent of dark chocolate. Honestly, the whole sipping experience has us wishing we had the last two glasses on a straw hut bar. Cheers.
