MEET THE PRODUCER | Fredy Orantes is a name that's new to our menu, but he's been regarded as a leader and champion among coffee producers in the Santa Rosa region of Guatemala for years. From picking to processing, Fredy is obsessive about both quality and sustainability, and he oversees every step of the process from his idyllic farm. This Gesha lot is a testament to his meticulous care, and we were really wowed by it when it came our way on the cupping table. We are thankful to our friends at Torch Coffee for making the introduction!
TRUST THE PROCESS | After being handpicked at peak ripeness, the coffee cherries are delivered to the wet mill (located at Buena Vista) and floated to remove lower-density beans and rinse them of dust and excess microbes. Then, the coffee is spread out on raised beds to dry for 25-30 days, with frequent turning to ensure even drying.
TAKE A SIP | This is a Gesha lot, so you can probably anticipate a lot of what we're going to say: it's beautiful. It's clean and vibrant. It has nice florals and great acid. But, what really stuck out to us about this coffee is how meticulously balanced it sits between variety and processing. Honeysuckle aromatics and a cara cara-like citrus presence put Gesha variety characteristics on display. But, notes of berries (like raspberry and strawberry) taste not unlike they've been dipped in chocolate - and those nuances tell the tale of a naturally processed coffee. Both beautiful and interesting, this coffee is a testament to Fredy's meticulous approach to specialty coffee production in Guatemala.
