Wilder Lazo - Natural Gesha

MEET THE PRODUCER | Wilder Lazo grew up on a coffee farm, but until 2017, he was a veterinarian by trade! Something stirred in him while visiting his father's farm that year, and he - like so many other producers we've featured over the years - left his day job behind to pursue specialty coffee. His background in genetics and insatiable love of learning led Wilder to begin a varietal program in Tocora which has since grown to include more than twelve different coffee varieties from various origins. He is passionate about specialty coffee and relentless in his pursuit of excellence, and those qualities have consistently led to some of the most delicious coffees to ever grace our cupping table.

TRUST THE PROCESS | After being handpicked at peak ripeness, the coffee cherries are floated to remove lower-density beans before being submerged in plastic tanks alongside other Gesha and SL28 lots for seven days. During this time, pH is monitored continuously so that it does not drop below 5. Finally, the cherries are rinsed clean and spread out on patios for drying, a process which takes about 25 days. 

TAKE A SIP | As with all of Wilder's meticulous processing endeavors, this lot showcases the characteristics of both the variety and its processing in a way that honors each of them perfectly. Floral like bergamot and abundant in complex citrus, there is no doubt this coffee is a Gesha. But the fermentation makes itself known by coming across extra tropical, like lychee and pineapple and pomegranate. A red stone fruit note, like black cherry, nods to that natural process as well.
