A little about the Producers | 

These coffees come to you curtesy of two, fourth generation coffee producers in the Sagastume Family, Yeltsin and Yerin. The Sagastume family has been growing and processing coffee in Honduras for nearly 100 years, and we have featured several of its members on our menu before - including Yeltsin, Yerin and their other siblings, and also their father, Pedro.

A little about the Cup of Excellence process |

Established in 1999, COE is a prestigious competition and auction for high caliber specialty coffees. Every year, thousands of coffees are submitted and cupped in an extensive process. Here's an overview of the timeline: 

• National Jury Round 1: a jury of around 12 people from the native country blind cup and grade the coffees with the best 90 coffees moving on, coffees need 86/100 points to move on
• National Jury Round 2: a jury of around 12 people from the native country blind cup and grade the coffees with the best 40 coffees moving on, coffees need 86/100 points to move on
• International Jury Round 1: a jury of 20-25 coffee professionals from around the world blind cup and grade the coffees, coffees need 87/100 points to move on
• International Jury Round 2: a jury of 20-25 coffee professionals from around the world blind cup and grade the coffees, the top 30 coffees are then ranked and the winners are announced and then the coffees move to auction
