MEET THE PRODUCER | Merlin Sabillon grew up in Santa Barbara, picking coffee for other farms and dreaming of one day owning a coffee farm himself. At age 21, he managed to purchase a 2-hectare plot of land on which to build that dream. He began by selling commercial coffee, and it was the volatility of that market which eventually led Merlin to pursue specialty coffee instead. He participated in Honduras COE for the first time in 2016 and sold his first specialty coffee micro-lot in 2020. A true picture of steadfastness and resilience, we are thrilled to share Merlin's story - as well as his lovely Parainema lot - with each of you!
TRUST THE PROCESS | After being handpicked at peak ripeness, the coffee cherries undergo both hand-sorting and floating to ensure proper quality. Then, the cherries are immediately removed to a solar drier to dry for 17-22 days, until 9.5-10% moisture content is achieved.
TAKE A SIP | Melin's is a relatively low-impact natural lot, presenting itself almost more like a honey-processed coffee instead. It's super sweet, with a delightful note of almond toffee, or even amaretto. Fruits like black cherry and honeycrisp apple (we don't get that one every day!) are abundant in this cup, and the whole tasting experience reminds us why we love Parainema naturals so much.
