MEET THE PRODUCER | What's a generational coffee empire without a little sibling rivalry? This month, we have the distinct privilege of featuring two Honduras Cup of Excellence (HCOE) contenders on our menu - and they're coming to us from two of the three Sagastume brothers! 

Yeltsin Sagastume is a fourth generation coffee producer in the Santa Barbara region of Honduras. If you recognize that last name, it's probably for good reason: the Sagastume family has been growing and processing coffee in Honduras for nearly 100 years, and we have featured several of its members on our menu before - including Yeltsin and his siblings, and also their father, Pedro. Over the last decade or so, Pedro has been dividing his many farms amongst his children for them to continue shepherding the family business. La Pila is one such plot of land, gifted to Yeltsin by his father in 2014, and it is there that Yeltsin cultivated and processed this rare and delicious Maracaturra lot.

At HCOE back in May of this year, one of our owners (Kyle) and our head roaster (Matt) had the privilege of spending time with the Sagastume brothers and cupping their coffees at origin. Yeltsin bested his brother, Yerin, by taking #20 in COE with this special lot, and we are so excited to share it with all of you today!

TRUST THE PROCESS | After being picked at peak ripeness, the coffee cherries were hand-sorted for quality and placed in sealed tanks for an extended stint of anaerobic fermentation. on raised beds for drying, until optimal moisture content was achieved.

TAKE A SIP | This cup is a true testament to three things working perfectly together: talented processing, unique variety, and incomparable terroir. Vibrant and structured, this coffee is delightfully tropical, like mango and pineapple, but also remarkably sweet. Dark fruit, like blackberry, is also apparent. You'll be tipped off to its processing method as you're reminded of natural wine while you sip, but this is one of the most approachable anaerobic natural experiments you'll ever have the pleasure of consuming.
