MEET THE PRODUCER | The Arcila family name is no stranger to our menu - we've hosted many co-fermented lots from Jairo Arcila over the years, and his sons, Carlos and Felipe, have produced experimental process lots which have featured as well. With a generational coffee empire that spans over 80 years, we continue to be awed by the Arcila family's commitment to excellence in both coffee growing and processing in Armenia. Today, we have the privilege of welcoming a new Arcila name to our menu: Martha Arcila, the sister of Jairo, and aunt to Carlos and Felipe. Like Jairo, Martha inherited several farms from their father over twenty years ago, but it wasn't until 2019 that she committed entirely to the production of specialty coffee, rather than focusing on volume. Unlike her brother and nephews, Martha doesn't lean so heavily on experimental processing techniques. Instead, she's focusing on executing fundamental processing flawlessly - and this washed Castillo lot is a testament to the success of that endeavor.
TRUST THE PROCESS | The coffee cherries are harvested following a strict ripeness criteria and then floated to remove defects. After 30 hours of underwater fermentation, the coffee is de-pulped and gently washed before being dried in temperature-controlled conditions until optimal moisture content is achieved.
TAKE A SIP | Vibrant, clean, and sweet, this lot is everything we look for in a green label coffee. The citrus is subtle and the sweetness is confectionary, reminding us of red apples and brown sugar - candy apples, anyone? The fruit profile tastes dried or cooked, like dried figs or poached pears. It's such a lovely, classic sipping experience - and certainly one you can share with anyone at the table.
