1. WASHED PROCESS - NOTES OF WHITE FLOWERS LIKE JASMINE OR MAGNOLIA, STONE FRUIT, LIME,  AND CLEAN HONEY SWEETNESS

This is the style of production Lem used in the 2016 USBC, and Kyle used in his signature drink is the WBC 2017 competition. It is the classic representation of clean Panamanian Gesha coffee. This coffee is picked at bright red, before being repulsed, dry fermented and then washed clean with fresh mountain water.

2. HONEY PROCESS- NOTES OF WHITE FLOWERS, CHERRY, TROPICAL FRUITS, AND HONEY

Honey process is a fairly common process for Panama but it is picked at mixed red pulped, rinsed and then allowed to dry. The honey coffees Pocho produces are very clean, and like the name would suggest are slightly sweeter with a heavier body than the washed ones, with a more pronounced stone fruit character.

3. NATURAL PROCESS - NOTES OF WHITE FLOWERS, COMPLEX TROPICAL FRUIT, STONE FRUIT,  AND RED BERRIES LIKE RASPBERRIES AND STRAWBERRIES. 

Natural coffees at high elevations are generally very difficult, time consuming, and expensive to produce. Pocho dries his coffees one layer deep which lowers the fermentation temperature and results in a cleaner and more consistent natural coffee.

Highlighting Three different processed coffees from Finca Nuguo Farm in Juratungo, Panama; Washed, Honey and Natural.  

Excited to offer for a limited time,  coffee from Kyle and Lem’s work with Pocho and the Gallardo family from the Finca Nuguo farm located in Juratungo, Panama. Nuguo is the crown jewel of Jose Gallardo Sr’s (Pocho’s father) coffee growing business. It is just a small 5 hector farm planted with Gesha variety trees 12 years ago. This small farm was largely unattended until Jose Gallardo Jr (Pocho) took it over 3.5 years ago. Along with Pocho’s Engineering background, and Tim Hill from Counter Culture Coffee’s help, Pocho made changes to the production and drying techniques, which got him first place in the “Best of Panama Coffee” washed coffee competition. The coffee took first place over names like “la Esmerelda” and “Elida Estate” famous for their year in and year out quality. Pocho’s and Jose’s coffee has been featured in the final rounds of the World Barista Competition the last two years, along with another Panamanian Gesha grower names Jamison Savage of Finca Deborah

Lem and Kyle picked Pocho’s coffees for their amazing floral character, clean sweetness, and amazing lime like acidity. This particular acidity to believed to be due to Nuguo’s elevation and terrain situated right on the edge of La Amistad International Park.
